Healthy Grill Chicken


Happy World Health week peeps!! So when I was asked by Plattershare to prepare something healthy, nutritive and easy for their World Health Campaign, in association with Licious meats. This is what I did!! My choice of meat was Chicken, considering its versatility and how it can be cooked using various methods like steam, grill, fry, boil etc. So yep - I grilled this one using a simple marinade using Indian spices and served it up with some sautéed veggies. What makes it even more healthy is - overall only 3 tbsp of Olive oil was used to make this Grilled chicken.

I also used Chilli micro greens growing in my home garden to give it a hot, picture perfect and unique flavour.

So here's what you need to dish this one up - For the marinade: Boneless chicken breasts - 2 pieces 1/2 tsp - Turmeric powder 1tsp - Crushed schezwan peppers/ Whole black peppercorns 1tsp - Red Chilli powder 1/2 tsp - Coriander powder 1/4 tsp - Garam masala 2 tbsp - Curd 1/4 tsp - Lime juice Salt to taste A pinch of dried fenugreek leaves

  • Mix all of the above ingredients and let it marinade for a min of 1 hr/ best left overnight in a refrigerator.

  • Pre heat the oven to 180C for 10mins.

  • Place the chicken pieces over your grill pan, drizzle some olive oil and let it cook for 15-20mins

For the tossed veggies 1/2 cup - Julienned carrot 1/2 cup - Julienned Bell peppers 2 Baby corns - chopped 1/2 cup - Button mushrooms A few Jalapeños 1/2 Tsp - ToastedWhite Sesame seeds 1 tsp - Soy Sauce 1/2 tsp - White wine vinegar 1 - Bokchoy

  • In a girdle , add one tbsp olive oil and toss the vegetables up (starting off with carrots & baby corns)

  • Once the veggies are half done add in the soy sauce, vinegar and salt to taste

  • Dish out and sprinkle the toasted sesame seeds & jalapeños .

  • You can either serve the Grilled chicken breast as a whole piece or slice them up like I did.
